3 Waffle Recipes That Will Mesmerize Your Tastebuds

From cheddar cornbread to zucchini fritters, here are recipes that will have you dusting off your waffle iron to make dinner fun again.

For a pick-me-up from the dinnertime doldrums, sometimes you just need a change of shape. When leftovers loom, pop them in your waffle iron, make a delicious dipping sauce or easy topping, and suddenly everything old is new again. 

Waffle Iron Zucchini Fritters

Ingredients:

  • 2 cups grated zucchini
  • 1 egg
  • ¼ cup milk
  • ½ cup grated Parmesan
  • ½ cup flour
  • salt and pepper to taste
  • pinch of Aleppo pepper or smoked paprika

Directions:

  1. Toss grated zucchini with a big pinch of salt and place in a colander to drain for 20 minutes.
  2. Heat waffle iron to medium-high.
  3. While waffle iron is heating, make the batter. Rinse grated zucchini under cool water and squeeze out as much moisture from the zucchini as possible. Place zucchini in a medium mixing bowl and add egg, milk, and Parmesan. Whisk until all ingredients are incorporated. Sprinkle flour over the top of the mixture and fold in gently. Season to taste with salt and pepper.
  4. Spray or lightly brush waffle iron with oil and add 2-4 tablespoons of batter to the center of the waffle iron, depending on how large you want your waffles. Close the lid and cook until waffles are golden brown and crisp. Remove and repeat with remaining batter. Serve topped with additional grated Parmesan.
  5. Makes 8 tiny waffles or 4 to 6 larger ones.

Cheesy Scallion Mashed Potato Waffles

Ingredients:

  • 2 tbsp. olive oil
  • ¼ cup buttermilk
  • 2 eggs
  • 2-3 cups cold mashed potatoes
  • 1 cup grated sharp cheddar
  • 3 green onions, sliced (white and green part)
  • ½ cup flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • Additional chopped scallions, sour cream, and crumbled bacon to serve

Directions:

  1. Heat waffle iron to medium-high.
  2. In a large bowl, stir together olive oil, buttermilk, eggs, potatoes, cheddar, and scallions, mixing well. 
  3. In a separate bowl, stir dry ingredients together, then fold them into the potato mixture.
  4. Spray or lightly brush waffle iron with oil and scoop batter in, spreading evenly.
  5. Close the lid and cook until waffles are golden brown and crisp. Remove and repeat with remaining batter. Serve topped with additional chopped scallions, sour cream, and crumbled bacon.

Cheddar Cornbread Waffles

Ingredients:

  • ¾ cup cornmeal
  • ¾ cup flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 tbsp. honey
  • 1 cup buttermilk
  • 4 tbsp. melted butter
  • 1 egg
  • 1 cup grated cheddar or jack cheese
  • 1 pickled jalapeno, diced (remove the seeds if you prefer less heat)
  • Chili, beans, salsa, or chopped cilantro for serving

Directions:

  1. Heat waffle iron to medium-high.
  2. Combine dry ingredients in a large mixing bowl.
  3. Make a well in the center and add honey, buttermilk, melted butter, and egg. Whisk to combine.
  4. Fold in cheddar and jalapeno.
  5. Spray or lightly brush waffle iron with oil and scoop batter in, spreading evenly.
  6. Close the lid and cook until waffle is golden brown and crisp. Remove and repeat with remaining batter. Serve topped with chili, beans, salsa, or a sprinkle of chopped cilantro.
