4 Gluten-Free Dessert Recipes

If you’re like me, you know the struggle of going from fluffy baked goods to tasteless gluten-free treats. While I don’t have celiac disease, I started eating gluten free a year ago to help bring down inflammation from my eczema. I noticed a huge difference! But at first, boy, did I miss classic baking. I loved food too much to give up, though, and found these gluten-free recipes as near-perfect replacements.

1. Chocolate Mug Cake

As a business owner, I’m all about efficient convenience. That’s why this gluten-free chocolate mug cake and I fell in love at first taste. I have all the ingredients (there are only six) memorized by heart, because I make it every evening without fail. I even add some protein powder, and it still tastes like a gourmet cake.

2. Gluten-Free Banana Bread

Banana bread brings back nostalgia since I made it every week as a kid. We always had bananas lying around. So once I went gluten free, I knew I had to find a replacement. This recipe is it. It’s moist, chewy, sweet, and doesn’t have that gummy texture of typical gluten-free goods. Plus, it doesn’t send my eczema into a rage.

3. Almond Flour Chocolate Chip Cookies

I made this recipe one night on a whim when I was craving some classic chocolate chip cookies. They were gone within the hour. Even my family members who aren’t gluten free gobbled them up. I recommend adding in some shredded coconut for extra flavor and chilling the dough for 30 minutes before baking. That way, the cookies don’t spread too much.

4. Gluten-Free Pancakes

Pancakes are another one of those family traditions I just couldn’t give up. But most gluten-free pancakes fall apart so easily and barely retain any fluffiness. Not these. They’re just how any pancake should be: fluffy and thick, with just enough sweetness.

Whether you have celiac disease or are gluten free for another health reason, it can be tough trying to find desserts you enjoy. But I promise they’re out there.
