5 Tricks for the Perfect Seafood Spaghetti

Part of the beauty of living in Italy is the food and how people gather around the table to make every meal a celebration. One of my favorite Italian dishes that I can think of is seafood spaghetti (or any pasta with fish).

Seafood spaghetti is an Italian classic. It gathers together all the summer flavors: fish, garlic, parsley, and tomatoes. You take a bite, and you can almost feel the salted sea breeze, perfectly wrapped in the sweetness of the tomato sauce. And the best thing about it is that you can eat this any season you want when you travel to Italy.

I can't remember when I first ate seafood spaghetti, but I know where I fell in love with the dish. It was in Naples, where people are pretty serious about what they eat. I like to recreate the dish at home whenever I need to get into vacation mood.

After today, you can do it, too. Here are five simple tricks to cook the perfect seafood spaghetti this summer.

1) Cook the Spaghetti Al-Dente

Pasta al-dente ("to the tooth") is arguably healthier than overcooked pasta. When you take a bite, you should see a small white spot in the middle of the spaghetti. Cook the pasta for two minutes less than the suggested time. Then toss it in the pan with the sauce for another minute.

2) Use Fresh Seafood When Possible

Italian cuisine is all about the quality of the ingredients. Freshly caught fish adds that little extra that puts you by the sea when you take a bite. Frozen fish is good, but it won't have the same taste intensity.

3) Add a Bit of Dry White Wine

A few minutes after you start cooking the seafood, add a small glass of dry, white wine. As you prepare the sauce, there'll be no alcohol left, so it's safe for kids.

4) Add Extra Olive Oil if You Don't Like Tomatoes

If you go for a "white sauce," instead of tomatoes, add some hot water from the pot where you cook the pasta. In the end, season with a drop of olive oil. It contains healthy fats and exalts all the flavors.

5) Don't Overcook the Shrimp

Three to four minutes are enough to get the perfect cooking results.

That's it. Add a glass of dry white wine, play some Italian music in the background, and enjoy a perfect dish.
