Black Bean Breakfast Tacos Recipe

Breakfast tacos are a beloved classic. However, rather than filling your tortilla with egg and cheese, try this simple black bean filling for a plant-based protein-packed option.

2 Servings Prep Time: 5 minutes, Cook Time: 10 minutes

Ingredients

  • 4 flour or corn tortillas
  • 1 can of black beans
  • ½ cup salsa verde
  • ¼ cup green chilies
  • ½ avocado, sliced
  • ½ lime, juiced
  • chopped cilantro
  • salt and pepper to taste

Instructions

Place one tortilla at a time in a nonstick pan along with some cooking spray. Cook each side for about one minute before flipping over and cooking the other side. In a separate pan, combine black beans and chiles along with some salt and fresh-squeezed lime juice, and cook over low to medium heat. Once the beans are hot, fill your tortillas and top with sliced avocado. Finish each taco off with a drizzle of salsa verde, lime juice, and some chopped cilantro. If you’re looking to kick off your morning with a bit of spice, this is the perfect dish.
