Black Bean Breakfast Tacos Recipe
Breakfast tacos are a beloved classic. However, rather than filling your tortilla with egg and cheese, try this simple black bean filling for a plant-based protein-packed option.
Ingredients
- 4 flour or corn tortillas
- 1 can of black beans
- ½ cup salsa verde
- ¼ cup green chilies
- ½ avocado, sliced
- ½ lime, juiced
- chopped cilantro
- salt and pepper to taste
Instructions
Place one tortilla at a time in a nonstick pan along with some cooking spray. Cook each side for about one minute before flipping over and cooking the other side. In a separate pan, combine black beans and chiles along with some salt and fresh-squeezed lime juice, and cook over low to medium heat. Once the beans are hot, fill your tortillas and top with sliced avocado. Finish each taco off with a drizzle of salsa verde, lime juice, and some chopped cilantro.
