Cinnamon Apples and Granola Recipe

Rather than sugary cereal or cinnamon buns, this morning meal of sautéed cinnamon apples and granola cures your sweet tooth without causing a dreaded sugar crash. 

3 - 4 Servings Prep Time: 15 minutes, Cook Time: 35 minutes

Ingredients

  • 2 Fugi apples, thinly sliced
  • 2 tbsp. ghee
  • 1 ½ tbsp. brown sugar
  • 2 ½ cups old-fashioned rolled oats
  • ½ cup almonds and cashews, roughly chopped
  • ½ tsp. salt
  • 1 ½ tsp. cinnamon
  • ½ cup maple syrup
  • 3 tbsp. coconut oil, melted
  • 1tsp. vanilla extract

Instructions

First, you’ll want to get started on your granola. As your oven preheats to 325 degrees, combine your oats, nuts, salt, and 1 teaspoon of cinnamon in a bowl. In a separate bowl, mix your maple syrup, vanilla extract, and coconut oil until creamy. Next, combine both bowls, and coat the dry oats and nuts evenly with the syrup mixture. Pop in the oven, and bake for about 33 minutes or until the granola has a nice golden tint. While the granola is cooking, melt some ghee in a pan and add your sliced apples. After the apples have cooked for about 5 minutes, throw in brown sugar and half a teaspoon of cinnamon and stir so that the apples are coated in the sweet sauce. Serve with the apples on top of the granola and enjoy with a nice cup of coffee. 

Notes

Optional: Pour some almond or oat milk over your granola for a breakfast that’s reminiscent of your favorite cereal.
