  • 3/4 cups flour, (almond or white)
  • 3 tbsp. sugar
  • 1 1/4 cups powdered sugar
  • 3 egg whites
  • 1 tbsp. lemon juice
  • 1 tbsp. extract, (your choice)
  • 1 tub frosting, (your choice)
  • A few drops of coloring, (get creative!)


Mix flour and powdered sugar in one bowl and regular sugar and egg whites in the other. Add lemon juice, extracts, and colors to the egg mixture before whipping it into soft peaks. Next, fold the dry ingredients into the egg mixture gently before piping 1-inch cookies onto a baking sheet. Bake at 300 degrees for 15 minutes before letting the hot cookies cool on the counter. Once they’re ready to go, just add frosting and sandwich them together.

And don’t forget, you can dress up your frosting as well. Add any colors, extracts, or fun additions before plating the cookies. This makes for a really fun and very customizable Mother’s Day recipe that pairs perfectly with Giving Plates.
