Frozen Lemonade Pie Recipe
My mom — whom I adore — is so many amazing things, but a cook is not one of them. (Don’t worry; she totally agrees with me!) She does have a few recipes that she makes perfectly, and no one else can make them quite like she does. One of these recipes is her Frozen Lemonade Pie. It is a no-bake pie with only four ingredients, so it is incredibly simple and perfect for summer — so you still have a little bit of time to "officially" enjoy!.
During the summer when I was growing up, we had one of these pies in the freezer almost all the time. Every time my mom made a new pie, she would save some filling and pour it into little ramekins for me. I rarely had the patience to wait for even the small portions to freeze like they were supposed to, so I’d usually end up sitting on the counter eating the lemonade filling with a spoon — or with my fingers, if I couldn’t make it to the silverware drawer fast enough. This is one of my fondest childhood memories because I felt so special every time she’d fill up those ramekins with me in mind.
One of my favorite things about this pie is that it is versatile. My mom always made it with regular lemonade concentrate or pink lemonade concentrate, but you can use lime, orange, or any other variety to suit your favorite flavor profile while also keeping the recipe quick and simple.
And of course, what's great about this pie is that it's not made in the oven but in the freezer, which is a summer win-win.
Frozen Lemonade Pie
Ingredients
- 12 ounces frozen lemonade concentrate
- 8 ounces Cool Whip whipped topping
- 14 ounces sweetened condensed milk
- 1 graham cracker piecrust
Allow the lemonade concentrate to sit at room temperature for 20–30 minutes or until it is mostly melted. In a large bowl, combine the whipped topping, condensed milk, and melted lemonade concentrate and fold until fully combined. Pour the mixture into the piecrust. Place the pie in the freezer for 2–3 hours or until frozen.
