Healthy, Gluten-Free Banana Bread
One thing that I know to be universally true is that — regardless of what diet or food philosophy you choose — fresh, wholesome food closest to its natural state is the healthiest. Hands down. There is no diet that asks for overly processed food. It is crazy how, when you are on a special diet like gluten- or grain-free, you start having difficulty finding healthier delicious options.
I remembered stomping the health-food stores in 2004 with a mama trying to find quick-to-make gluten-, egg-, and dairy-free breakfast items for her then 3-year-old daughter, who was allergic to everything (seriously).
How can someone with an already compromised immune system thrive on food with so little nourishment? I ended up making a lot of food for D. Here is an easy, delicious, almond-flour blueberry banana bread recipe you and your whole family — especially the kiddos — are going to enjoy.
Ounce for ounce, almond is one of the most nutrient-dense tree nuts. Its combination of protein, fiber, and healthy monounsaturated fats provide long-lasting energy. Along with my other ingredients below, that makes this a superfood bread that tastes absolutely finger-licking good.
Banana, a perfect food, is known for its sweetness, its high level of potassium, and is a part of the BRAT (acronym for banana, rice, applesauce, and toast) diet, which helps with severe diarrhea. But there is more to the banana — it is loaded with essential vitamins and minerals, such as calcium, manganese, magnesium, iron, folate, niacin, riboflavin, and B6. It is also an amazing immune-booster, aids sleep, and lessens pain — pay closer attention the next time your baby eats a banana.
Anyway, I digress. Bananas also add sweetness to my bread and reduce the amount of added sugar.
Blueberry is packed with antioxidants, vitamin C, and a sweet flavor that comes to life in my blueberry banana bread recipe. Don’t be fooled by the size — these tiny fruits are nutrient-dense. They rank the highest of any fruit for antioxidants (those free-radical-fighting powerhouses), and one cup delivers 14 percent of the recommended daily dose of fiber and nearly a quarter of the recommended daily intake of vitamin C.
Pure maple syrup is a low-glycemic sap that contains antioxidants and minerals, such as zinc and manganese. (Please remember this is not the same as flavored maple syrup.)

Gluten-Free, Superfood Banana Bread
- 2 1/2 cups blanched almond flour
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp baking soda
- 3 happy eggs (pastured)
- 1/4 cup pure maple syrup
- 1/4 cup plain whole-milk yogurt
- 1 ½ cup mashed ripe banana (about 3 large)
- 1 tsp pure vanilla extract
- 1 cup blueberries
Preheat the oven to 350°. Grease a large bread pan with oil. In a large bowl, mix together the five dry ingredients: almond flour, cinnamon, nutmeg, salt, and baking soda. In a medium-size bowl, whisk the eggs. Add maple syrup, yogurt, mashed bananas, and vanilla. Whisk together until combined. Pour the wet ingredients into the dry ingredients and mix well. Gently fold in your blueberries (leave a handful to drop on the top).
Pour the batter into a large bread pan and bake for 50-60 minutes, until the center is firm. Allow to cool. Remove from pan. Enjoy as a snack, wholesome treat, or breakfast.
