Roasted Strawberry Lemonade Is the Summer Drink of Your Dreams
Drinking lemonade always brings me back to summers as a kid, when my siblings and I would set up a little lemonade stand. We would actually make a few bucks — and spend it all when the ice cream truck rolled around.
There is something about an ice-cold glass of tart lemonade on a hot summer day that always hits the spot.

I like to keep them fresh and relevant while also staying true to the original recipe, which is exactly how I would describe this Roasted Strawberry Lemonade.
Roasted strawberries are my summer 2020 obsession, and they are elevating this lemonade big time. Roasting the strawberries is super simple (see instructions below), but it adds an incredible depth of flavor and sweetness. The strawberries also let off most of their juice while roasting, which thickens and turns syrupy, lending even more flavor and a beautiful color to our lemonade.
We take our strawberries and muddle or stir them into the lemonade. There will be chunks of roasted strawberries floating throughout the lemonade, which basically means you get a snack and drink all in one. This results in a perfectly balanced drink, both sweet and tart, that you will want to be sipping on all summer long.
Roasted Strawberry Lemonade
1 pound strawberries, hulled and quartered
2 tablespoons granulated sugar
3⁄4 to 1 cup granulated sugar, depending on how sweet you want it
1 cup water
1 1⁄4 cup fresh-squeezed lemon juice, seeds and pulp removed
6 cups cold water
Preheat your oven to 400° F. Place your strawberries in an 8x8 pan and sprinkle with the sugar. Roast the strawberries for 15-20 minutes, stirring occasionally. Remove from the oven and allow to cool completely. Roughly mash the strawberries with a fork.
In a small saucepan, combine the sugar and 1 cup of water to make a simple syrup. Bring the mixture to a low boil and stir until the sugar is dissolved. Remove from heat and allow to cool completely. In a large pitcher, stir together the roasted strawberries, simple syrup, lemon juice, and cold water.
