Refreshing and Delicious Summer Mojito Mocktail Recipe

Summer is here, meaning we are looking for something fruity and fun that can quench our thirst. One of my big go-tos on any menu is a tropical mocktail.

Mocktails have all of cocktails’ refreshing, interesting, fun ingredients — minus the alcohol. Whether you don’t drink at all or want something to wet your palate, a mocktail can be a great summer treat.

Don’t leave all the fun to the cocktails this summer. Try this intriguing yet healthy (hello, vitamin C!) mocktail recipe:

Pineapple Mint Mojito Mocktail

1 Serving


  • 4 - 5 pieces of pineapple, around 1” - 2”, cubed
  • Fresh mint leaves, around 4 - 5
  • ½ cup grape juice, chilled
  • ½ sparkling water, chilled
  • 1 tbsp lime juice


  1. In a small bowl, toss in the chunks of pineapple. Using a muddler or the back of a wooden spoon/spatula, muddle the pineapple until it breaks down into much smaller pieces (the size you would be okay with in your drink). It should take at least a couple of minutes.
  2. Add in the mint leaves and muddle for just a few seconds more, enough to bruise the leaves so that the flavor is released.
  3. Transfer the mixture to your serving glass. Add in some ice cubes if you wish, then the grape juice, lime juice, and sparkling water.
  4. Give the mixture a gentle stir to combine the ingredients.
  5. Garnish with extra pineapple wedges and a sprig of mint. Enjoy!
